The Royal Eclair - Queen of Desserts

"I've called this, The Royal Eclair! It is filled with a caramel cream center, dipped in smooth chocolate and crowned with golden crushed honey brittle."

It's a dessert that is fit for all the Queens in our lives. The Queens that enrich our lives and are always there. Happy Mother's Day to all the incredible Moms out there!

In the lead up to Mother's Day, I was challenged by Royal Baking Powder to Bake it Best, from Scratch! I decided on a bit sized dessert that would not only melt in your mouth, but also provide layers of flavor and texture.   • 5ml Royal Baking Powder

  • 250 ml flour

  • 250 ml boiling water

  • 60g butter

  • 3 eggs

  • 250 ml cream

  • 1 slab chocolate

  • Honeycomb brittle

  • 1 Tin dessert caramel


Heat water and butter to boiling point. Add flour and Royal baking powder together and add to water. Stir constantly until mixture is smooth and forms a ball

Remove from heat and let cool.

Beat in 3 eggs, one at a time.

Drop dough from a tablespoon to form small eclairs onto a greased baking tray.

Bake for approximately 30 minutes on 180 or until light brown.

Set aside to cool.

Filling: Beat cream and fold in half a tin of dessert caramel. Use a piping bag to inject the caramel cream into each eclair.

Chocolate dipped: Melt chocolate on a double boiler and dip in cooked eclairs.

Finishing touches: Crown with crushed honey brittle.
