
Over the weekend, we took up the challenge and baked the most delicious Snap Cookies made using Silan Date Syrup. We took a recipe Milly had passed down through the family and adjusted it slightly. The result? The most delicious, chewy snap cookies. The first batch was gone before I even had time to snap some pics. They are that good!

Silan Date Syrup Snap Cookies
1 cup brown sugar
1 cup soft butter
1/4 cup @silan.co.za date syrup
1 large egg
1 teaspoon vanilla essence
2 1/2 cups flour
2 teaspoons bicarbonate of soda
1 teaspoon ground cinnamon
1 teaspoon mixed spice (ginger, nutmeg, cinnamon, clove)
1/2 teaspoon salt
1/4 cup brown sugar for rolling
Method
Beat together brown sugar, butter, date syrup, egg and vanilla until well combined
Mix in the flour, bicarb, cinnamon, mixed spice and salt.
Roll balls and flatten them and dip into sugar.
Place on a well greased baking tray at 140deg for 8 to 10mins, keep an eye on them they burn easily!
